Efate and Santo have shops, markets, and restaurants with the widest choice. Tanna has a useful market in Lenakel and bungalow kitchens, but far fewer restaurants. On remote islands you eat what is grown, caught, or shipped in, and supplies can thin out between boats. Plan special diets before you leave town, and treat outer-island meals as part of the place.
Port Vila has the broadest range, from market cooks to international restaurants. Luganville on Santo is the next widest, with cafés and seafood as well as hotel dining. Elsewhere, choice shrinks quickly to bungalows, a few eateries, and village kitchens. If variety matters to you, spend some nights in Vila or Santo and keep outer-island stays more local.
They can be quite limited, and that is normal. Expect simple meals, seasonal fruit, and fewer packaged options. Vegetarian, gluten-free, or other specific diets are harder to meet unless you have talked to your hosts in advance. Bring a few snacks from town if you are particular, and enjoy the freshness of what is actually grown there.
